Fluffy Breakfast Biscuits

My oldest daughter started ice skating lessons last week.  Never in my life did I anticipate an ice skating lesson being so downright hilarious!  Picture about 25 kids ranging in age from 4-7 all lined with bright red walkers slowly inching their way down the ice.  Every sound of metal clanging meant another kid down and an instructor would come swooping in from behind to stand them upright.  It was just a massive chaotic scene of wobbly legs, and jello-like ankles that contributed to piles of shivering children attempting to detangle their skates and walkers.  My sister and I laughed so hard that by the end we were getting dirty looks from half the parents in the room.  I’m horrible, I know, but if you had to sit on metal bleachers for an hour in a refrigerator I guarantee you would be trying to find some humor in it too.

The great part of having your children enrolled in physical activity after school?  They crash hard when they get home and sleep right until you wake them up the next morning 🙂  It’s worth every penny.  So they also deserve a good hearty breakfast.

My favorite breakfast (other than sticky buns) is fluffy biscuits with sausage gravy.  It’s just so filling and scrumptious, it just starts a cold day out right.  It took me a while to get to a good biscuit; I’ve tried everything from butter to shortening to oil to buttermilk to different leavenings but I finally got to these!  Once you get the butter-cutting technique down it doesn’t take long to whip these up in the morning.  These are buttery, light and fluffy with a flaky crunchy top.  Perfect for gravy or just a smear of butter and jam.

Fluffy Breakfast Biscuits
Yields approximately 16 (2 inch) biscuits

Ingredients:

3 cups all-purpose flour
1 1/2 tablespoons baking powder
1/2 teaspoon salt
9 tablespoons unsalted butter, cold and cut into pieces
1 1/4 cup milk, cold

2 tablespoons butter, melted

Directions:

1. Preheat oven to 450 degrees (F).  In a large bowl whisk the flour, baking powder and salt together.  Add the butter and cut in with 2 knives, a pastry blender or your fingers until the mixture resembles course crumbs and the largest pieces are no bigger than the size of small peas.  Add the 1 1/4 cup milk all at once and mix with a rubber spatula or wooden spoon just until combined.

2. Knead the dough in the bowl 2 or 3 times, folding the dough over itself, just into a rough ball and then transfer to a lightly floured surface, cover with plastic wrap or parchment paper, and roll or pat out to 1/2 inch thick.  Cut into 2 inch rounds with a biscuit or cookie cutter dipped in flour.  Make sure to push the cutter straight down and pull back up without twisting so that the biscuits will rise evenly.  Place the rounds on a baking sheet and brush with melted butter.  (You can re-roll the scraps once, any more than that and you risk kneading the dough too much and you’ll end up with tough biscuits) Bake in preheated oven for 10-12 minutes or until golden brown on top and a deeper golden brown on the bottom.

    Here’s my confession: I absolutely hate biscuits. Wayyy to dry. My wife on the other hand, lives for them, so I’ll make these for her sometime 🙂 Thank you for sharing, they look very flakey and fluffy!

      The trick to moist biscuits is to make sure the dough looks ‘damp and still sticky’ when you remove it from the bowl. It picks up extra flour on the rolling surface and when handled making the actual biscuits and this additional flour can make them dry. Just a hint!

    Funny story about ice skating! I never took lessons because I could not even balance on those blades.
    Your pictures really do convey fluffy in these biscuits so your title here is very fitting. Also, they have really convinced me that I need to try them. Delicious post.

    Haha it’s funny. I forgot that that’s how I learned to ice skate too as a child. Your biscuits look perfect. I’ve never been able to achienve the perfectly fluffy biscuit so kudos to you!

      thank you! you can use your fingers or two knives to cut the butter! I actually don’t have one either 🙂

        I cut both ends out of a soup can and use that as a biscuit cutter.

    They look terrific.But how you measure 9 Tbs. of cold butter?
    I would like to make them but the butter think keeps me back.

      thank you! 9 tablespoons is equivalent to 4 1/2 ounces, or 1/2 cup plus a tablespoon, grams is less precise as I’m not sure completely how to calculate that but a little over 127 grams. If you’re a little over or a little under on the butter it won’t change things drastically 🙂

    My husband’s favorite breakfast is biscuits and sausage gravy, too. I always make homemade biscuits, but like you I’m always changing up my recipe to try to get them just right. I thought I had finally gotten them how I wanted them, but these look so good, I think I’ll have to give your recipe a try next time!

    when my mom was making strawberry jam in the winter she would whip up a batch of these and we would sit down and have some with fresh strawberry jam on them. a glass works just as well if you don’t have a cookie cutter (just a thought)

    Oh my gosh, I laughed when I read your blog. My son, now 30, wanted to play hockey at the age of 5 even though he had never been roller skates/blades let alone ice skates!! A family friend was the good friend of a hockey coach who agreed to put John on skates and on his team. Little did I know that John would be put on the ice pushing a chair (they didn’t use the walkers – great idea) around while the other, more experienced skaters, practiced hockey around him.

    It was hysterical (and heartbreaking) watching my son fall and struggle, but were proud of his determination getting back up over and over again. To my shock and pleasure, it wasn’t long before John was whipping around the ice, becoming a great forward playing until he was 18 and out of high school!

    Your biscuits look fantastic!!! We love biscuits and gravy, unfortunately I have not found a recipe that has worked out. I love the photo’s that show your steps along the way. We will try these soon.

    These are without a doubt the best looking biscuits I’ve ever seen. A spoonful of Bon Maman cherry preserves and a cup of hot tea, aaah.

    These biscuits looks so fluffy! I absolutely LOVE a good biscuit. I can only pictures the kids on the rink – I have a 6 year old, and group sports can be just downright hilarious!

    These look fab! Have you ever tried making a batch and freezing it? Of course before cooking. I wonder how that would turn out? the way my crazy family is I only need a couple biscuits at a time.

    Just made the dough, covered the bowl, stuck it in the fridge and will roll and cut them out in the morning. Was just so tempted by the photos of those lovely, well risen biscuits, especially the half one, spread with jam. Too tempting. 🙂 I too have never had luck with biscuits, but my love of them keeps me trying. I’ll comment tomorrow to let you know how mine turned
