Nutella S’mores Cupcakes
I couldn’t wait to show you these adorable graduation cupcakes! So I’m not waiting 🙂 We’re having a celebratory barbeque for my brother’s graduation today and we whipped these up this morning. I know I would normally insert some random story here but like I said, we’re bbq’ing. So I hope you enjoy your weekend, hopefully now it will include these cupcakes 🙂
melt chocolate candy melts and dip square graham crackers to coat
combine egg whites, sugar, water, corn syrup and some other things and beat the frosting over a double boiler
Start with chocolate cupcakes, anyone of these or these or these will work. Unwrap them and flip them upside down on a baking sheet.
Remove the middles of the cupcakes
dollop the cupcakes with seven minute frosting aka fluff 🙂
Top them with the graham crackers and pipe a strip of the frosting on top for the tassel
or if you’re not celebrating a graduation…
keep the wrappers on, fill the middle with nutella and dollop the icing
stick a chocolate covered graham cracker on top
Seven Minute Frosting
Adapted from the More from Magnolia cookbook
Yields enough to frost 30 cupcakes (or more-I only had 30) or a 9 inch layer cake
Ingredients:
3 large egg whites, at room temperature
2 1/4 cup sugar
1/2 cup cold water
1 1/2 Tablespoons corn syrup
1/8 teaspoon salt
1/2 teaspoon cream of tarter
1 1/2 teaspoons vanilla extract
Directions:
1. In a medium saucepan, bring 2 inches of water to a simmer.
2. Combine the egg whites, sugar, cold water, corn syrup, salt and cream of tarter in a heatproof bowl. Place bowl over simmering water (it should not touch water); and with a handheld mixer, beat on high speed until stiff peaks form, about 7 minutes.
3. Remove from heat and beat in vanilla extract. Use immediately.
nutella & s’mores in a choco cupcake! does it get any better than that?!
Wow, these look delicious! I made a version of s’more cupcakes last year when I was just picking up baking and they turned out….well, not very well. These look great. Plus, I really like using the frosting tip to take the center out of the cupcakes. Well played!
thanks! I guess you’ll just have to try them again… 🙂 I was really just doing them for the graduation caps-if I was making them truly s’mores I’d probably do a graham cracker base and torch the marshmallow. the nutella filling was the best part though!
